If you want to remove police in GTA 5, just activate the cheat code of Clear Wanted Level and if you want to add wanted levels, just activate the cheat of Six Star Wanted Level.
If you want to lock the Wanted level, you can activate the cheat code of Lock Wanted Level. if you want to disable wanted level/ No star add up even after doing any type of crime, then you can use Disable Wanted level cheat
